Total Eclipse of the Home


This week we are gearing up for the solar eclipse! Our studio in Rochester, NY happens to be within the Path of Totality, so the hype has been REAL and we haven't escaped it! Our little city is expecting half a million people to arrive to view this celestial event which will only last about 3-4 minutes. Fingers crossed it isn't cloudy.

With so many eclipse themed products and events popping up around the city, we couldn't help but jump on the bandwagon. And with any excuse to bake British style biscuits, we chose to make our own take on eclipse-themed cookies to celebrate the day!

For those unfamiliar with UK style biscuits, they are THE BEST! During my time living in England I got to sample all sorts, my favorite of which are Dark Chocolate Digestives. They are super dry, mildly sweet, and go spectacularly with a cup of coffee. Most biscuits in the UK are not of the home-made variety, but you can buy them readily available at the Tesco down the street. This recipe is one we found online from an Irish chef, and they do not disappoint. While they don't taste exactly like a biscuit right out of the wrapper, I'd say they taste somewhere between a Digestive and Walker's Shortbread... I'm not complaining.

Donal Skehan's Homemade Digestive Biscuits

Ingredients:

225g Whole wheat flour
1 tsp Baking powder
1/2 tsp sea salt
90g Confectioner's sugar
120g Cold butter, cubed
60 ml Milk

Instructions:

1. Preheat oven to 350 F. Line a baking tray with parchment paper.
2. Combine flour, baking powder, salt, and sugar in a mixing bowl and mix to combine ingredients.
3. Quickly, working with your fingertips or a blender, rub the butter into the dry ingredients until the mixture resembles breadcrumbs. Add the milk to form a dough.
4. Turn out on a floured surface and roll to form a smooth dough.
5. Using a well-floured rolling pin, roll the dough out to a bit more than 1/8" thick and cut into rounds, about 2 1/2 inches in diameter. You can keep rolling the scraps together to make additional dough.
6. Transfer the biscuits to your baking pan and if desired, prick the biscuits with a fork to create holes. Bake for 20 minutes until biscuits are pale gold.

Our add ons:

Ingredients:

Dark Chocolate chips
Coconut Flakes
Sea Salt

Instructions:

1. Using a double broiler, melt the dark chocolate chips.
2. When biscuits are cool, use a knife to spread the chocolate, leaving a rim of biscuit exposed at the ends
3. Before the chocolate has cooled, sprinkle the coconut in the pattern of your choosing
4. If desired, sprinkle with sea salt
5. Let cool, lay out on your favorite platter to admire
6. Share with your favorite people OR keep it all for yourself! :)
